Giant Chewy Oatmeal Cookies

When you get a cookie craving mid week the only thing to do is make them giant. Who has time to rotate 2-3 dozen cookies through the oven? Not this girl! I made 8 big huge oatmeal cookies and was such a happy camper.




I love adding random mix-ins to my cookies. This original recipe doesn't have any nuts or treats added to it and its delicious but I had walnuts on hand so I tossed them in and oh my yum! Dig around and see what you have on hand to mix in!


Giant Chewy Oatmeal Cookies


1/2 Cup Butter Room Temperature
1/2 Cup Brown Sugar
1/4 Cup White Sugar
1 Egg
1 Tbsp. Molasses
3/4 Cup Flour
1 1/2 Cup Rolled Oats
1 Tsp Cinnamon
1/2 Tsp Baking Soda
1/2 Tsp Salt
2 Tsp Cornstarch

Preheat the oven to 350° and line 2 sheet trays with parchment paper. In a small bowl, combine flour, oats, cinnamon, baking soda, salt and cornstarch. Set aside.  In a large bowl, cream together the butter, brown sugar, white sugar, egg and molasses. Stir until completely smooth. Add in the dry mixture and stir until evenly mixed. Portion cookie dough into 1/3 cup balls and roll in between palms to make round. It will make exactly 8 cookies. Gently press each ball down with the bottom of a glass to slightly flatten. Cook 4 on a tray, but only 1 tray at a time. Space evenly and bake for 15 minutes. Press down lightly on the cookies and bake for another 3-5 minutes. Let cool and store in an airtight container.

Skinny Lemon Margarita

Oh my margs! I have such a love/hate relationship with you. I absolutely love a good homemade marg but I cannot for the life of me order one at a restaurant with out completely micromanaging the bar tender. Like, I'm not trying to drink juice with a drop of tequila in it!




I have pretty much perfected the at home marg and love switching up the flavors from time to time. I am a huge lemon fan and these Skinny Lemon Margaritas really hit the spot on a warm day... well, any day really!


Skinny Lemon Margarita

1 1/2 Ounces Silver Tequila
3 Tablespoons Fresh Squeezed Lemon Juice
1 1/2 Tablespoons Fresh Squeezed Orange Juice
1 Teaspoon Light Agave Nectar
Kosher Salt for the Rim
Ice

Rim you glass with salt. Fill the glass with ice and set aside. Fill a cocktail shaker or mason jar with more ice and all other ingredients. Tightly close the shaker or jar and shake like crazy. Pour the cocktail into the glass and drink up!

Easter Brunch Ideas

I love love love Easter! For the last two years we have been moving on Easter. Ugh.. talk about annoying. It just really puts a damper on my festivity planning. Well, I guess I can still plan right? Here's my dream Easter Sunday all wrapped up in one post!


Brunch is a must! Am I right? We are talking all the things, drinks, appetizers, cake... all of it! Let's start with the cocktail because why not!


This Spring Seasoned cocktail by @elle_talk screams spring time! Hello Elderflower, Rose and Black Pepper. I'll take two!






As you know, apps are my jam! I live for a good appetizer and to be honest I just cant get over these Treager Smoked Deviled Eggs. Sprinkle on a little everything but the bagel spice and call it a meal.






@thedefined dish just took Caprese Salad to a whole new level by adding asparagus and burrata. I think we have all died and gone to heaven. This woman is a goddess in the kitchen and this salad proves it!




Brunch wouldn't be brunch without cake! @howsweeteats speaks to my soul with this Pistachio Carrot Cake. Its the perfect marriage of flavors and I'm here for it.

Black Olive Hummus

Holy cow! Life feels like it is fast forward right now. Being a full time working mom has kicked my booty. Everyday is a struggle to keep up with household tasks and it seems like feeding myself is last on the priority list some days. Quick, healthy, and filling snacks are an absolute must right now. This black olive hummus is satisfying in every possible way.






Black Olive Hummus-
1 Can Chickpeas (drained)
1 Can Pitted Black Olives (drained)
4 Cloves of Garlic
4 Tablespoons Olive Oil
4 Tablespoons Chicken Broth
Juice of 1/2 Lemon
2 Teaspoons Cumin
Salt and Pepper to taste

Put all ingredients in the blender or food processor and blend until smooth.

Mocha Cashew Butter

There are few things that make me more happy than a delicious creamy cashew butter and coffee! Hence why I had to marry the two. This Mocha Cashew Butter is so simple to make and is as decadent as any dessert but so healthy! Win/win in my book! So what are we waiting for? Lets make it!




Mocha Cashew Butter-
1 Cup Roasted Cashews
1 Tablespoon Espresso Beans
2 Tablespoons Coconut Oil
2 Teaspoons Cacao Powder
1 Teaspoon Vanilla Extract

Add all ingredients to the food processor and blend until smooth!

Easter Egg Cookies

Easter has always been one of my favorite holidays! I just love the pastel colors, the fresh crisp smell of spring in the air, and of course the adorable treats! These Easter Egg Cookies speak to my 6 year old self!



Easter Egg Cookies-

1 small package of whopper eggs
1/2 cup of butter, at room temperature
1 cup sugar
1 egg
1 1/2 tsp vanilla
2 cups flour
1/4 tsp baking soda
1/4 tsp salt
2 tbsp milk

Preheat your oven to 350 degrees. In a mixer, cream together the butter and sugar. Add the egg and vanilla. Mix until well blended. In another bowl whisk together the flour, baking soda and salt. Add the flour mix, alternately with the milk, to the butter mixture, mixing until well blended. Line a cookie sheet with parchment paper. Shape the cookie dough into 1 inch balls. Do not press them down. Bake for 10-12 minutes, or until edges of the cookies are lightly browned. Remove the cookies from the oven and let cool for 2 – 3 minutes. After this time press 3 small Easter eggs into the middle of the cookies. Let cool completely on a wire rack.

Buffalo Chicken Celery Sticks (Whole30)

You wanna know my two most guilty pleasures? I cant even believe I am telling you this right now! Here goes nothing.... buffalo chicken anything and corndogs! How strange right!? Since both of these are not something I can possibly indulge in very often I was determined to make a healthier version! Still working on those corndogs but these buffalo chicken celery sticks do not disappoint!








Buffalo Chicken Celery Sticks-
2 Cups Shredded Chicken
1/4 Cup Whole30 Compliant Mayo
1/2 Teaspoon Garlic Powder
1/4 Teaspoon Salt
1/4 Teaspoon Pepper
3 Tablespoons Franks Hot Sauce
6 Celery Stalks (cut in half)

Mix all ingredients together in a large bowl. Stuff the chicken mixture into the celery stalks.

Cheesy Olive Bread

I was on my way to the market the other day and I was reciting my list over and over because why would I write it down? It went a little something like this... olives, cheese, bread, wine. Olives, cheese, bread, wine. Then I literally LOL'ed! This list is my life. What more could we possibly need.






Thus, this delicious Cheesy Olive Bread was born. It is rich and delicious. The salty olives make the perfect bite with the ooey gooey cheese and crispy bread. Of course I paired it with a glass of Cab for the final touch!






Cheesy Olive Bread-
1 Loaf French Bread
1/2 Cup of Mayo
1/2 Cup Unsalted Butter (Softened)
6 Ounces Pimiento Stuffed Green Olives (Sliced)
1 2.25 oz. Can Sliced Black Olives
8 Ounces Shredded Monterey Jack Cheese
3 Stalks Green Onion (Chopped)

Preheat oven to 350 degrees. Slice the loaf of bread in half lengthwise. Mix mayo and butter together in a large bowl. Add all other ingredients and mix well. Spread mixture onto bread. Bake for 20-25 min or until melted and bubbly.

Apple Cinnamon CBD bites

I recently started using CBD oil and I am such a fan. People always ask me "how does it make you feel?", the only way I can really explain it is that its like a big deep breath in a bottle! Does it make you stoned? NO! It just helps take the edge off. Really, that's just the tip of the iceberg when it comes to all of the benefits but we will get into that another day.








I typically add the oil to my morning cup of coffee or smoothie but I've been looking for new ways to incorporate it and these Apple Cinnamon CBD bites are such a fun little snack. I pack a couple each day and enjoy them for a mid morning bite or an afternoon pick me up!


Apple Cinnamon CBD Bites -
1 Cup Old Fashioned Oats
1/8 Cup Ground Flaxseed
1/2 Teaspoon Cinnamon
1/4 Cup Almond Butter
1/8 Cup Honey
1 Pinch of Salt
1/2 Cup Grated Green Apple
2 Full Droppers of CBD oil

Mix all ingredients together. Form small (golf ball sized) balls. Don't roll the mixture in your hands or it will fall apart. Press the mixture together to form the balls. Place on a lined cookie sheet and refrigerate for 30 min. Store in the refrigerator.

Baby's First Bite

One of the things that I have been most excited about since finding out I was pregnant is making baby food/kid friendly meals! Its like a whole new world and I am fully embracing it!







Lincoln just started eating purees so the recipes are a little boring at this point since we are currently giving her mostly just green and orange veggies. I decided to add in apples in this puree and she is loving it!




Purees can be messy but I know that someday I am going to miss this mess so for now I am taking deep breaths and enjoying every bubble that she blows with a mouth full of carrots! Here are some items that we are currently loving for baby food making and dinner time.

Banana Muffins (Sugar Free, Dairy Free)

Who doesn't love a good muffin? I will tell you that I typically don't love the ingredients though. Now that Lincoln is getting bigger and we will soon be introducing more foods into her diet, I am on a mission to make some of our traditional recipes healthier. I have a feeling these Banana Muffins might just be her favorite someday!






Banana Muffins-

3 bananas
1/4 Cup Honey
1/3 Cup Coconut Oil (melted)
1/3 Cup Unsweetened Applesauce
1 Egg
1 Teaspoon Vanilla Extract
2 Cups Flour
1 Teaspoon Baking Soda
1 Teaspoon Cinnamon
1/2 Teaspoon Salt
1/2 Teaspoon Nutmeg
1/2 Cup Walnuts

Pre-heat oven to 350 degrees. In a large bowl mash the bananas. Mix in all other wet ingredients. In a separate bowl mix dry ingredients together. Combine wet and dry ingredients. Stir in walnuts. Fill lined baking cups 3/4 full and bake for 17- 19 minutes.

Crispy Artichoke Hearts w/ Chipolte Aioli (Whole30)

Artichokes are really having a moment in my house right now. I love love love them but can I be honest... I don't love making the whole artichoke and dealing with the mess of cleaning them. I was determined to find an easier way to enjoy these little gems and these Crispy Artichoke hearts fill my heart with joy! They are so easy to make and they are a great on their own as a snack/appetizer or as a topping for your salad. The options are endless!












Crispy Artichoke Hearts w/ Chipotle Aioli-



1 Bag Frozen Artichoke Hearts
2 Tablespoons Olive Oil
Salt and Pepper

Pre-heat oven to 425 degrees. Toss artichokes in olive oil and salt and pepper. Place on a cookie sheet and bake for 45 min.



Chipotle Aioli-

1 Egg Room Temp (this is v important)
1 Cup Avocado Oil
1 or 2 Chipotle Peppers
1 Splash Red Wine Vinegar
1 Teaspoon Mustard Powder
Juice of 1/2 a Lemon

Put all ingredients in a tall mason jar (make sure that mouth of the jar is large enough for your immersion blender to fit). Put the immersion blender directly over the egg yolk. Turn immersion blender on and slowly lift it up. The liquid will quickly change consistency and become aioli.

Pink Velvet Popcorn

It is raining pink in our house these days and I am soaking up every bit of it! Little Miss Pinkalicious has us wrapped so tight around her little finger we can barely breathe. I just know she is going to be all things girly so I am practicing my pink and sprinkle dessert skills now!






Pink Velvet Popcorn-

1 box white cake mix prepared (mix in pink food coloring prior to cooking)
8 cups popped popcorn
22 oz white chocolate chips
 1 tablespoon Crisco

Crumble cake mix and set aside. Melt white chocolate chips with Crisco in it. In a large bowl toss popcorn and melted white chocolate. Spread out onto wax paper and sprinkle with cake crumbles. Let chocolate set.

Cheesy Bacon and Green Onion Dip

Its been a hot minute since I have posted a recipe on here so I had to make sure it was going to be a good one! This dip is all things yummy! I mean who doesn't love a dip that keeps you coming back for more? I cannot stop with this one. It is so dangerous!









Cheesy Bacon and Green Onion Dip

1 8 oz Container of Whipped Cream Cheese
1 Cup Mayo
2 Cups Shredded Cheddar Jack Chees
5 Chopped Green Onions
1/2 Cup Cooked Crumbled Bacon
1 Tablespoon Crushed Garlic

Combine all ingredients in a large bowl. Top with green onion and bacon. Serve immediately or store in refrigerator.
