Soft and Chewy Sugar Cookies

I feel like the sugar cookie is the basic b**** of all cookies! You see them everywhere this time of year but you cant help but love the simplicity and perfection. You know like a real basic b****. You see her everywhere this time of year wearing Uggs, Starbucks in hand, humming "all I want for Christmas is you". Can't help but love her simplicity and perfection!

Now I am imagining adorable little Ugg boot shaped sugar cookies! I mean how cute! Maybe next year! ;)

This recipe lends the most pillowy and soft sugar cookie! They are still a little crisp on the edges but the inside is perfection. I wouldn't use this recipe for cut out cookies but this would be delicious with a little icing and cup of tea!

Soft and Chewy Sugar Cookies-

Yields- 2 dozen cookies

1 Cup Butter Softened
1 Cup Granulated Sugar
1 Egg Room Temp
3 Teaspoons Vanilla Extract
2 1/2 Cups All Purpose Flour
1/2 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1/4 Teaspoon Salt

Pre-heat oven to 350 degrees. Line a baking sheet with parchment paper of cooking spray. In standing mixer or large bowl, cream together the butter and sugar. Add egg and vanilla, beat until well combined. Slowly add all other ingredients until they are well incorporated. Don't forget to scrape down the sides of the bowl occasionally. Roll dough into 2 inch balls. Place on baking sheet two inches apart. Use a flat spatula to press the dough down a bit, creating a thick disc shape. Bake for 11 minutes or until edges are golden brown.
