Double Stuffed Chocolate Covered Dates

I feel like the name of this recipe is quite fitting. Not only because the dates are literally double stuffed but because after the holidays I am feeling double stuffed myself! I took the word indulge to its full potential this year!

Today is a new day and I am ready to have a salad for lunch and grab for this healthier dessert option if my sweet tooth calls! To be honest I love everything about these double stuffed dates and enjoy them just as much as I would a cookie but with a little less guilt!

I love all of the different textures that are happening here! The crunchy chocolate coating on the outside, then the chewy date, the creamy almond butter and then the crunch from the almond inside! Its perfect! Almost like you are eating a mini candy bar... but skinny!

Double Stuffed Chocolate Covered Dates-

15 Dates (Pitted)
Almond Butter 
Dark Chocolate Chips
Sea Salt

Melt the dark chocolate in a sauce pan. While chocolate is melting fill the inside of the date with almond butter and one almond. Squeeze the filled almond shut and dip in melted chocolate. Using a fork remove the date from the chocolate and tap it on the side of the pot to remove the excess. Place on a cookie sheet lined in wax paper. Sprinkle each date with sea salt. Place in the freezer until chocolate has hardened. Store in an air tight container in the refrigerator.

  2. First of all, I love the name of your blog and cannot wait to check out your other posts. Secondly I can completely relate to feeling double stuffed and in need of a salad haha. Lastly, this little skinny dessert sounds super delicious. I've always been a little tentative to try and eat a date but would absolutely be down to taste one of these!!! I've gotta try to recreate them one day. Any tips on how to get the almond butter in the date? [ps I was trying to comment as my wordpress account but could not figure it out haha but my blog site is]
