Hassleback Apples- A Skinny Thanksgiving Dessert

I'm not sure about you but when it comes to Thanksgiving I could honestly take it or leave it with the traditional menu. I'm not that into turkey and wtf is stuffing?!? But sign me up for all the carbs! Bread and potatoes here I come!

Honestly, by the time dessert rolls around I am basically a stuffed little butter ball myself! I still love like two bites and with this recipe you can indulge a bit with out feeling guilty!




These hassleback baked apples are basically apple pie but made with clean ingredients! Skip the coconut whip on top and this is the healthiest thing I have eaten all day! They are warm and ooey and gooey and perfect! You will love them so much that you wont even miss the pie crust. I know you are thinking "yeah yeah.. that't what they all say"! But seriously... in case you missed the beginning of this post I love all the carbs, so if I am saying you wont miss it then trust me you wont!


Hasselback Apples- 

3 Apples 
2 Tablespoons Pure Maple Syrup
3 Tablespoons Vanilla Bean Ghee
A Few dashes of cinnamon
Chopped Pecans

Pre-heat oven to 400 degrees. Cut apples in half. Core and peel apples. Place apple halves core side down on a cutting board. Make slices in the apples like an accordion, making sure that you aren't cutting all the way through the apple. I found that using a small paring knife for this works best. I get very carried away with larger knives! Melt Ghee over medium heat and add maple syrup and cinnamon. Place "sliced" apples in a greased baking dish. Brush on the Ghee/Syrup mixture. Spread the slices apart and brush ghee inside of the slices. Bake 30 min. Top with more Ghee mixture, chopped pecans and Cocowhip.
