Coconut Rose "Nice Cream"

I love a fun treat in the summer! And it is even better when it is guilt free like this coconut rose "nice cream". Ice cream is a favorite of mine but just like basically every person I know, I have to be very careful with dairy! It really upsets my stomach. That is why I have been trying some fun takes on this dairy free frozen treat. 




Coconut is my go to and I decided to make this recipe even more boujee by adding dried rose petals! I mean why not!? I have been incorporating these rose petals in everything! My floral facial steam, sparkling rose water, I even buy the most delicious lavender and rose chocolate! I could go on and on but I will get to the point here- 



Coconut Rose "Nice Cream"-

2 Cans Full Fat Coconut Milk 
2 Cups Frozen Bananas
1/8 Cup Pure Maple Syrup
1/4 Cup Shredded Coconut
Dried Rose Petals

Place all ingredients into blender and process until creamy smooth. Chill in fridge. Process according to the instructions of your ice cream maker. Serve immediately as more of a soft serve ice cream OR freeze for 1-2 hours to firm up a bit. Sprinkle the rose petals on top before serving!

I love having this on hand at all times in the summer. It is so impressive when you pull this out of the freezer for guests. You don't have to top it with rose petals. You could really use anything.. pineapple (or any fruit), chocolate chips, cashews, you name it. Get creative!
