Coconut Collagen Macaroons

I have taken collagen sporadically before but never on a consistent basis. Now that I am doing a 60 day collagen challenge I have been getting tons of questions! The most common question that I get is how do you get over the awful taste? I put two scoops of Vital Proteins brand collagen in my coffee in the morning and cant taste it at all! But if you babes are struggling I am here to help!

I decided to get a little sneaky and put collagen in something you would never expect! Thats right cookies! But don't worry... there is no guilt associated with these cookies! I get very sneaky when it comes to eating. I mask flavors that I don't like all of the time. And these cookies are the sneakiest little treat to date!



Coconut Collagen Macaroons-

2 mashed bananas
1 egg
1 cups shredded coconut
2 scoops of collagen
1/4 cup coconut flour
2 teaspoons vanilla
1 tablespoon pure maple syrup

Pre heat oven to 350 degrees. Mash two bananas in a bowl. Mix in all other ingredients. The batter will seem wet but its fine, trust me! Scoop batter onto a cookie sheet covered in coconut oil spray. Bake for 13 minutes. This recipe makes about 14 cookies. 



If you are feeling extra sassy then add in some chocolate chips! Enjoy!
